What I Ate Wednesday!
Breakfast today consisted of two pieces of toasted Trader Joe’s sprouted wheat bread with almond butter with a dash of cinnamon and Trader Joe’s cranberry apple butter. On the side I enjoyed fresh cantaloupe, strawberries, and blueberries.
I was so excited to try the TJ’s cranberry apple butter that I got this past weekend in Kansas City. Unfortunately, however, it was not as good as I thought it was going to be. Maybe it just needs to grow on my taste buds? Or maybe I do not love it because there is just nothing better than their beloved pumpkin butter? ;)
My mid-morning snack was, of course, a banana!
For lunch, I roasted some brussel sprouts and added them to a salad consisting of a fresh bed of Romaine lettuce along with carrots, onions, cherry tomatoes, and a vegan Boca Burger patty. I topped my salad with balsamic vinaigrette salad dressing.
Before heading to work, I snacked on a single-serving package of Trader Joe’s whole dry roasted almonds. Delicious!
Tonight’s dinner at work consisted of leftovers from last night’s dinner. I enjoyed Green Chili Quinoa with Soy Chorizo Tuesday and loved it just as much as leftovers tonight. Don’t worry, I will be posting the recipe soon! ;) I also ate an apple on the side.
Tonight’s snacks will likely consist of baby carrots with hummus and probably either some Pop Chips or some microwave kettle corn popcorn…only time will tell!
