Sweet and Savory Wafflewich

I absolutely love a sweet and savory breakfast.  My love for the sweet and savory combination has resulted in me developing (and frequently eating ;)) a wafflewich (a sandwich made with waffles) that uses both “sweet” and “savory” ingredients.  Not only does this result in a delicious combination, but it does not hurt that it is beyond easy to make and is high in protein.  In my opinion, it is one of the best ways to start the day!

Sweet and Savory Wafflewich

Servings: 1

Ingredients

EVOO cooking spray
1 egg
2 whole grain or whole wheat waffles (I use frozen Kashi whole grain waffles)
1 TB jelly or jam (I generally use blackberry jam)
1 TB pumpkin butter OR 1 Laughing Cow cheese wedge (I like the garlic and herb variety)
2 slices vegetarian “bacon” (or use regular baking if you are not a vegetarian)
black pepper

Directions

1. Heat a small skillet over medium heat until warm.  Spray the skillet with EVOO cooking spray.  Crack an egg into the skillet and cook it in the form of a sunny-side up egg.  Be careful not to cook the egg too long, as you want the yolk to remain runny.

2. While the egg is cooking, toast your waffles.  Or, you can make homemade waffles, if you wish.

3. Just prior to the waffles and eggs being fully cooked, microwave or cook the vegetarian “bacon” for 60-90 seconds.

4. Spread one waffle with your favorite jelly or jam.  Spread the second waffle with pumpkin butter, a cheese wedge, or another desired topping.

5. Assemble the wafflewich by placing the sunny-side up egg onto one of the waffles.  Sprinkle black pepper onto the egg.  Top the egg with the bacon slices.  Finally, stack the second waffle on top of the other ingredients.

At first, to some, this may sound like a strange combination.  But I promise you, the amazing taste that results from both the sweet and savory ingredients is absolutely amazing.

What makes this breakfast sandwich even better is that when you cut into it and the egg yolk breaks it becomes even more savory.  To me, there is nothing better than a runny egg ;).

A Sweet and Savory Wafflewich has become somewhat of a Saturday morning ritual for me.  However, just writing this post is kind of making me think that I might need to eat one on a Wednesday morning!
